Trim both ends of the cucumber. Using one of the trimmed ends, rub it against the cut surface of the cucumber in a circular motion. This draws out the cucurbitacin, the white bitter compound, from the cucumber. Rinse and slice thinly.
Place the sliced cucumber and onion in a bowl. Add the salt and mix well by hand to ensure everything is evenly coated. Set aside for approximately 30 minutes. The salt draws out moisture from the cucumber, resulting in a crunchier texture, and mellows the sharpness of the raw onion.
To check if the cucumber is ready, bend a slice gently. If it does not snap, it is ready.
Rinse the cucumber and onion under running water to reduce the saltiness.
Squeeze firmly with your hands to remove excess moisture. For easier handling, use a cheesecloth or muslin cloth to wring out the liquid. Set aside.
